"American pistachios are grown in California, Arizona and New Mexico. The U.S. is number one in global commercial production with an estimated production of more than 270 thousand tons in 2012. There are more than 950 pistachio growers in the United States. About 99% of the world's pistachio production is in California." A brief introduction from the newsletter of the American Pistachios Grower Organization tells us how important the California is to the American pistachio production.

On the journey to the Pistachio processing facility in Madera, we explored how the pistachios grow on the tree and are processed to become snacks and ingredients. The nut required less water than other crops and plums, so it is ideal for the climate of dry California, said Raslay Rachel, grower manager of the farm.

Pistachios trees take about 6-10 years to mature but can bear nuts for over 100 years. They are pollinated by wind. One male tree is planted to about 15-25 female trees.
